10 portions
  • 6 chicken breasts, divided into 4 and flattened
  • 1/2 kilos huitlacoche mushroom
  • 1 onion, finite
  • 1 clove garlic
  • 1/2 kilos green tomato
  • 2 serrano peppers
  • 1/2 onions, in pieces
  • butter
  • epazotes
  • salt
  • chicken broth, the necessary

In a saucepan put a little butter and sauté the chopped onion. Add the chopped and clean huitlacoche and season with salt. Let it cook until it releases all the juice.
The flattened chicken breasts are stuffed with the huitlacoche and stopped with a toothpick. Fry the rolls in butter until golden brown.
The green tomatoes are boiled together with the chiles and the epazote. They are ground in the blender with half an onion and garlic. Put in a saucepan to cook with a little oil, put a little sugar or baking soda to remove the acid and season with a little powder and salt broth.
The chicken breasts are placed in a greased refractory and covered with the sauce. Bake in the oven for a few minutes or until the chicken breasts are cooked.

They are served with a salad of watercress and potatoes.
