Turn on your oven for making this stuffed chicken in adobo sauce, the perfect dish for your Christmas dinner. This recipe, besides being delicious, is healthy, since the filling is made of vegetables such as carrot, tomato and potato combined with raisins and a touch of wine, which make it taste delicious. Ingredients

4 portions
  • 6 guajillo chilies, for the marinade
  • 4 garlic, for the marinade
  • 2 leaves bay (laurel), for the marinade
  • 2 whole cloves, for the marinade
  • 2 allspices, for the marinade
  • 1 tablespoon oregano, for the marinade
  • 3 tablespoons oil
  • 1 cup almond, without the shell
  • 1/4 cups onion, finely chopped
  • 1 plantain, cut into cubes
  • 4 tomatoes, cut into cubes
  • 1 cup potato, cut into cubes
  • 1 cup carrot, cubed
  • 1/2 cups raisin
  • 3/4 cups olive
  • enough orange, cut into slices, to decorate
  • enough aromatic herbs, to decorate
  • enough cherries, to decorate
  • 1 whole chicken

Preparation

Preheat the oven to 200 ° C (393F)
Cook the chili peppers, the cloves of garlic, the bay leaf, the cloves, the pepper and the oregano in boiling water. Remove and drain.
Blend the previous preparation until obtaining a smooth marinade.
In a pan over medium heat heat the oil, fry the almonds, onion, plantain, tomato, potato, carrot, raisins, olives and cook for 5 minutes. Let cool and reserve.
Fill the chicken with the vegetable mixture, tie with cotton twine and season well with salt and pepper.
Place the chicken in a refractory oven dish and glaze with the marinade. Bake for 1 hour or until cooked, glazing it from time to time with more adobo sauce. Remove and rest before cutting.
Serve the chicken and enjoy.

PRESENTATION

On a plate, decorated with oranges, cherries and rosemary.

TIPS

To know if the chicken is well cooked, the cooking temperature should be 74 ° C (162F) Let the chicken rest for 5 minutes before cutting.
