Roast, peel and cut the poblano pepper in rajas.
Wash, disinfect the pumpkin flower, precook a little and also the corn kernels.
Place the onion, garlic, poblano peppers, pumpkin flower and corn kernels in a pan.
Season the thighs, add a few spoonfuls of the previous mixture. Help yourself with chopsticks to hold them and prevent the filling from coming out.
Grind tomato with garlic, onion and pepper, season to taste.
Preheat oven 180 ° C, 5 minutes.
Place the stuffed thighs and tomato paste in a refractory. Cover with aluminum foil. Leave it for 30 minutes or until the thighs are well cooked.
