Cut the chicken into pieces, salt all the pieces to taste. Heat the chicken in a saucepan with a little oil and two tablespoons of butter. Cook until sealed and golden brown, then add onion, pepper, carrot and leave on low heat for 40 minutes.
Boil the potatoes in water with a fist of salt. Once cooked cook them with a little butter, sour cream, chopped parsley and salt to taste. You can also leave them cooked and split into quarters with butter and salt only.
Accompany with a salad of lettuce, tomato and onion. Make a dressing using olive oil, juice of two lemons, a splash of honey, a pinch of nutmeg, salt and pepper. Mix well until everything is integrated and pour over the salad.
