Preparation
In a pan sauté whole garlic, onion cubes and plums.
Add whole guajillo chile, cubed tomato, oregano, thyme and bay leaf. Deglaze with red wine, liquefy this preparation with chipotle peppers, season and Reserve. (the mixture should be like a paste not very liquid)
We spread the thighs with the previous preparation. In an airtight bag we place the thighs each one separately that is, in a bag goes a single thigh and we close taking all the air out of the bag.
We cook in a pot with clean water for 40-45 minutes over medium heat.
For the purée: Boil the peeled potatoes with plenty of water and salt.
Once cooked the potatoes, crush them forming a puree. We put them in a pot on the fire and add the warm milk and butter, we finish with salt and pepper to taste.
To serve, we carefully remove the thighs from the bag and place some mashed potatoes to accompany them.
