It is a delicious recipe that will surprise your family or friends. This chicken with mushrooms, yellow pepper and red wine is exquisite. Prepare it, you will love it!

Ingredients

4 portions
  • 2 kilos whole chicken, washed, dried and cut into pieces
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 yellow bell pepper
  • 315 grams mushroom
  • 1 clove garlic, finely chopped
  • 1 teaspoon Dried oregano
  • 1/2 teaspoons Red chili pepper, in flakes
  • 1 cup Red wine
  • 1 can tomtato, in pieces
  • 1/2 teaspoons mushroom, ground and dehydrated pig
  • 1 cup Corn polenta, Cooked

Preparation

Season the chicken with salt and black pepper. In a large frying pan with a lid, heat the oil over medium-high heat until very hot. In batches or batches, add the chicken and cook it without a lid turning once until golden brown on both sides for 10 minutes. Pass it to a plate and reserve.
Remove 2 tablespoons of fat and empty the rest in the pan; return to medium heat. Add the onion and the yellow pepper cook uncovered, moving from time to time until softened, for 5 minutes. Add the fresh mushrooms, garlic and cook, stirring occasionally until the mushrooms are tender, for about 6 minutes. Blend basil, oregano and red chili flakes.
Add the red wine, raise the temperature and let it boil. Cook uncovered until the wine is reduced by half for about 5 minutes. Add the tomatoes and dried porcini powder, if it is going to be used, and let it boil. Return the chicken to the pan and cover very well. Reduce the temperature to medium-low and cook until it shows no pink signs when cutting near the bone, for about 30 minutes.
Spread a dish and lightly cover with aluminum foil to keep it warm. Let the sauce boil over high heat and cook uncovered until it thickens 3 to 5 minutes. Season with salt and pepper. Empty over chicken and polenta immediately.
