  • 1 chicken breast, skinless, boneless and moderately flattened
  • 1/2 cups olive oil, for the marinade
  • 1 tablespoon Dijon mustard, for the marinade
  • 1/2 tablespoons old mustard, for the marinade
  • 1 teaspoon garlic powder, for the marinade
  • 1/4 teaspoons black pepper, ground, for marinade
  • to taste salt, for the marinade
  • 2 liters Water
  • 1 teaspoon salt
  • 400 grams 4 La Moderna® elbow
  • 1 1/2 cups evaporated milk, for the sauce
  • 190 grams cream cheese, for the sauce
  • 1 clove garlic, for the sauce
  • 1/8 onions, for the sauce
  • 1/4 cups chipotle peppers in adobo sauce
  • 1 pinch oregano, for the sauce
  • 1 tablespoon butter, for the sauce
  • to taste salt and pepper, for the sauce
  • 1 cup baby spinach
  • to taste fresh oregano, to decorate
  • to taste pork rind, of parmesan to decorate


In a bowl, marinade the chicken with the olive oil, the Dijon mustard, the old mustard, the garlic powder and the pepper, around 15 minutes.
Once the time has passed, season with a little salt and cook in a pan over medium heat, until it is cooked. Cut into strips and reserve.
In a pot, boil the water and add salt. Cook the Moderna® elbow paste according to the package instructions, drain.
For the sauce, liquefy the milk with the cheese, garlic, onion, chipotle and oregano until obtaining a homogeneous mixture. Reservation.
Heat a deep skillet and melt the butter. Cook a sauce for a few minutes and add the spinach, let it boil, add the pasta and mix, season with salt and pepper.
Serve the pasta in a deep dish, add chicken strips, garnish with strips of Parmesan chicharrón and finish with fresh oregano leaves.


Serve with chicharrón of Parmesan and fresh oregano.


So that the cooking of the pasta is correct, you must bring the water to the boiling point, add the salt, and wait until the bubble becomes large again before adding the pasta.
