Chipotle Shredded Beef Tostadas

The Chipotle Shredded Beef Tostadas are a Mexican recipe made of beef skirt with red sauce. It is common to see it served in casseroles and accompanied by poblano rajas, chicharrón in green sauce and mole or pipián. For this recipe we use slow cooking, this makes the meat soften and very juicy. Prepare these rich tasting Tostadas, the perfect homemade recipe to serve any day of the week. You can add avocado or guacamole to complement your toastadas.

Ingredients

6 servings
  • 1 kilo of flank steak
  • 1/4 of piece of onion
  • 2 cloves of garlic
  • 3 leaves of laurel
  • enough of sea salt
  • 4 pieces of tomato
  • 1 clove of garlic
  • 1/4 of Cup of chipotle chile pepper
  • 1/4 of piece of onion
  • 1 tablespoon of oil
  • 1 piece of onion filleted
  • 12 pieces of fried or toasted corn tortilla
  • 1 Cup of refried beans
  • enough of lettuce to serve
  • enough of tomato in cubes, to serve
  • enough of sour cream to serve
  • enough of fresh cheese to serve
  • enough of sauce to serve

    Preparation

    In a pot with water, cook the meat with the onion, garlic, bay leaf and enough salt for about 2 hours or until smooth. Let cool and shred the meat with your hands. Reserve the cooking broth.
    For the sauce, liquefy the tomato with the garlic, the chipotle chili, the onion and ½ cup of the cooking broth.
    Heat the oil over medium heat, add the onion and sauté until slightly transparent, add the tomato sauce, season with salt and cook for 20 minutes.
    Add the shredded beef, season and cook for 10 more minutes.
    Assemble the toastadas with a base layer of beans, add lettuce, beef and serve with tomato, cream, cheese and sauce. Enjoy

    Serve on toastadas with beans, lettuce, cream, cheese, salsa and tomato.

    TIPS

    The beef skirt is a slow cooking cut, low fat, ideal for shredding. You can speed up the cooking in the pressure cooker.
