This recipe for Christmas turkey is stuffed with a mixture of ground beef with the flavors of bacon, ham and chopped apples. The beautiful golden color of the turkey is achieved with a flame or culinary torch.

Ingredients

12 portions
  • 1 Turkey, 8 kilos ((17.6 pounds)
  • 1/4 cups butter
  • 1 pinch nutmeg
  • 2 cups white wine
  • 250 grams ground beef
  • 250 grams ground pork
  • 1 slice bacon, 1 cm ((.39 inches) thick, milled
  • 50 grams Serrano ham, chopped
  • 2 apples, peeled and diced
  • 200 grams seedless prune
  • 1/2 glasses sherry
  • 1 pinch cinnamon powder
  • 2 tablespoons cornstarch
  • 1 cup Red wine
  • 1 tablespoon sugar

Preparation

Mix the beef, pork, and chopped bacon. Add the serrano ham, diced apples, chopped plums, and sherry. Salt and pepper.
Fill the turkey with the previous meat mixture and salt and pepper the outside of the turkey.
Preheat the oven to 200 (392F)degrees.
Put the turkey in a bag or wrap in aluminum foil and make perforations so that the steam can escape.
Remove the turkey from the oven and collect the juices released by the turkey.
Put the turkey in the oven for 4 hours (half an hour per kilo or 2.2 pounds). During the last hour, open the bag and let the turkey brown a little.
Melt the butter and mix it with white wine, inject the turkey with this mixture.
With a culinary torch, or flame, brown the whole turkey so that it takes on a nice color.
To prepare the gravy: mix 2 tablespoons of cornstarch with half a cup of water and stir with a cup of red wine.
In a saucepan, melt 1 tablespoon of sugar. When it is caramelized, add the previous wine mixture and let it cook over medium heat for 5 minutes.
Add the juices released by the turkey and add salt and pepper.
Serve the hot gravy along with the turkey.

TIPS

For a juicier turkey it is recommended placing salt all over the skin of the turkey 1 day before and leave covered in the refrigerator.
