Try this delicious recipe for cochinita pibil, which will drive you crazy, as it has that acidulous touch of orange and which is complemented in a unique way with the cured onions, making you addicted to its flavor.

Ingredients

8 portions
  • 2 cups Water
  • 2 cups orange juice
  • 200 grams achiote
  • 1/2 white onions
  • 2 garlic, teeth
  • 2 teaspoons oregano
  • 1 tablespoon cumin
  • 40 grams salt
  • 2500 grams Pork Meat, in pieces
  • 2 banana leaves
  • 6 whole black peppers
  • 10 habanero peppers, for the sauce
  • 25 milliliters apple vinegar, for the sauce
  • 100 milliliters Water, for the sauce
  • 1 teaspoon salt, for the sauce
  • 2 red onions, for cured onions
  • 50 milliliters apple vinegar, for cured onions
  • 150 milliliters Water, for cured onions
  • 1 teaspoon salt, for cured onions
  • 1/2 teaspoons oregano, for cured onions

Preparation

Preheat the oven to 190 ° c
Blend water, orange juice, achiote, onion, garlic, pepper, oregano, cumin and salt.
Marinade the pork for 30 minutes with the previous grind. Mix perfectly.
Pass the banana leaves through the stove burners, to soften and make them flexible. Without burning.
Arrange the plantain leaves in a baking dish, empty the pork meat marinated with its juice, cover with banana leaves, cover and bake for approximately 1 hour.
Check the cooking past time; if the pork is well cooked. It serves.
Sauce: grill the habanero chiles until they are very soft and cooked, grind in the blender with water, vinegar and salt. Reservation.
Cured onions: cut the onion into thin strips, put them in a bowl, add the water, the vinegar, the salt and the oregano. Mix perfectly and reserve.

PRESENTATION

Serve on platter on banana leaves!

TIPS

Marina for 2 hours so you'll have a better-tasting cochinita.
