Coconut Chicken in Mango Sauce and Chipotle

Prepare these delicious crispy chicken strips thanks to the crunchy corn starch with coconut. These strips are accompanied by a spicy mango and chipotle sauce that will give them a delicious touch.

Ingredients

  • 3 pieces of egg
  • 2 spoonfuls of mustard
  • 1 pinch of garlic powder
  • 1 pinch of onion powder
  • 1 piece of chicken breast cut into strips
  • 1/2 Cup of cornstarch to bread
  • 1/2 Cup of cornflakes ground, for bread
  • 1/4 of Cup of flour to bread
  • 1 1/2 cups of grated coconuts to bread
  • 1 tablespoon of Salt to bread
  • 1 tablespoon of Pepper to bread
  • 1 Cup of oil to fry
  • 2 cups of mango for the sauce
  • 1/2 Cup of sour cream for the sauce
  • 1/4 of Cup of marinated chipotle chile for the sauce
  • 1 teaspoonful of garlic powder
  • 1 pinch of salt and pepper for the sauce

    Preparation

    In a bowl add the eggs, mustard, garlic and onion powder and with the help of a fork whisk until incorporating all the ingredients. Dip the strips of chicken breast and marina around 10 minutes.
    In another bowl mix the ingredients of the breaded, cover the chicken strips on all sides and remove the excess.
    Heat a small pot over medium heat with the oil and fry the chicken strips until they are well cooked and browned. Remove the oil and with the help of your paper towels, Regio® Advanced removes excess oil.
    For the dressing, blend the ingredients until a smooth sauce is obtained. Serve with the chicken strips.
