Delicious roll of cold meats bathed in olive oil dressing, you'll love it, prepare it and enjoy its flavor.

Ingredients

10 portions
  • 1 kilo beef tenderloin, open as a sheet
  • 1 kilo pork tenderloin, open as a sheet
  • 4 sausages, (of good quality)
  • 4 strips bacon
  • 4 cups Water
  • 1 cup vinegar
  • 6 leaves bay (laurel)
  • 1 tablespoon chicken stock
  • 1 tablespoon black pepper
  • 1 piece white manta ray fish meat, previously washed
  • 1/2 cups Meat juice
  • 1/3 cups apple vinegar
  • 1/4 cups olive oil
  • 1 tablespoon onion, finely chopped
  • 1 bouquet parsley, finely chopped
  • 1 tablespoon English sauce

Preparation

The meat is seasoned a day before and left in the refrigerator with maggi juice and English sauce.
The meats are taken out of the refrigerator. The blanket is extended and the strips of bacon are placed vertically and the beef loin is extended and the sausage is crumbled on top.
The pork loin is placed on top and rolled tightly.
It is tied and placed on a tray.
Vinegar, onion, bay leaves, thyme and chicken concentrate are added in water.
Preheat the oven and put it for 2 hours covered with aluminum.
Remove it and let it cool, slice it and bathe it with the vinaigrette.
To prepare the vinaigrette, the yolks are dissolved in a little water and they are passed through a sieve. The other ingredients are added, stirring them very well. If the deses are clear, they can be cooked and chopped.

PRESENTATION

Serve in an extended dish and garnish with lettuce leaves, arranging the vinaigrette in a deep dish.

TIPS

Serve with mashed potatoes.
