Ingredients

6 portions
  • 5 guajillo chilies, clean, without tail or seeds.
  • 4 pasilla chili peppers, clean, without tail or seeds.
  • 1 ancho chili pepper, clean, without tail or seeds.
  • 1 chipotle chili, dry, clean, without tail or seeds.
  • 1 tablespoon coriander seed
  • 1 tablespoon allspice
  • 1/2 cups olive oil
  • 2 meats, according to your preference, in a thin cut. It can be a T-bone. 500 grams
  • 2 tablespoons sea salt

Preparation

For the marinade, blend the dried chilies with the whole pepper, the coriander seed and the olive oil until a homogeneous mixture is obtained, some pieces will remain.
Place the meat on the table, cover with the previous mixture and marinate for 10 minutes.
Cook on the grill for the desired term, season with salt. Serve the meat with the potato salad and guacamole.

PRESENTATION

Accompany with potatoes and guacamole.

TIPS

You can leave it cooking, depending on well done you want it. Remember that there are long and short marinades, in this case it is a short marinade that is applied a few minutes before cooking the meat, just to provide flavor and protect the meat.
