The drowned cakes of Jalisco are a very popular Mexican appetizer. It consists of a cake made with bread called "birote" which is stuffed with carnitas and then dipped in a spicy sauce, prepared with dry tree chile and tomato. They are simple and have a lot of flavor for all the ingredients that make them up.

Preparation
In a small pot heat the water and cook the tomatoes with the chili, onion and garlic.
Blend the previous preparation with a little liquid.
Heat a small pot over medium heat with the oil and sauté the previous preparation, add the bay leaf, the oregano, the clove, the cumin, season with salt to your liking and cook 5 minutes more so that it thickens slightly. Reserve the sauce.
On a short board the birotes remove a little crumb and stuff with the carnitas. Serve the cake on a plate and cover with the sauce. Add a bit of purple onions and red sauce to accompany. Enjoy
