Cook these delicious Tacos de Pato Confitado. We tell you how to make an avocado purée similar to guacamole, to accompany it. The tortillas are made by hand, so you do not need a tortilla machine to make them. The consistency of the duck is crispy by being confit. Ingredients

5 portions
  • 300 grams duck breast
  • 1 cup Orange soda
  • 1/2 cups evaporated milk
  • 1 orange, to squeeze
  • 1 cup oil
  • 1 bunch rosemary
  • 1 bunch thyme
  • enough salt
  • 1 teaspoon cumin
  • 250 grams corn dough, blue, kneaded and seasoned
  • 1 avocado, for the puree
  • 1/2 cups sour cream, for the puree
  • 1 lemon, juice, puree
  • enough salt, to decorate
  • enough pork rind, pulverized
  • 2 cambray onions, in hoops, to decorate
  • 1 avocado, in cubes, to decorate
  • enough buds, to decorate
  • enough lemon, To accompany

Preparation

For the confit, in a saucepan over medium heat add the duck breast with the fat down and cover with the orange soda, the evaporated milk, the oil, the rosemary, the thyme and let it boil.
Once it boils, lower the temperature and add salt, cumin and lid. Cook for 2 hours moving occasionally or until the duck is cooked and soft. Remove from cooking and reserve the cooking liquid.
For the tortillas, form balls with your hands of blue dough and with the help of a press form the tortillas. Cook on a low heat until they inflate, giving them at least two turns. Reserve while hot.
For the puree, blend the avocado with the cream, the lemon juice and ¼ cup of the duck's cooking juice until you obtain a smooth puree.
For the assembly, add on a plate two spoonfuls of the puree and with the help of a glass press to make a relief. Place an omelette on top, serve the duck confit and decorate with pork rinds, onion rings, avocado cubes, coriander sprouts and serve with lemon juice.

PRESENTATION

Serve the avocado sauce on the plate, the tacos, garnish with onions and cilantro shoots.

TIPS

Place the duck with the fat down when you cook it, which separates the meat from the direct fire and will make a non-stick effect as well as providing flavor.
