Ingredients

6 servings
  • 2 kilos of duck match in pieces and without skin
  • 3 spoonfuls of unsalted butter
  • to taste of ground pepper
  • to taste of Salt
  • 2 spoonfuls of olive oil
  • 1 onion finely chopped
  • 3 cloves of garlic finely chopped
  • 250 milliliters of sherry
  • 3/4 of Cup of Water
  • 1 ulna of vegetable bouillon
  • 3 branches of fresh thyme
  • 375 grams of fresh fig

    Preparation

    Season the duck pieces with salt and pepper.
    In an Express® Pressure Cooker over medium heat, melt butter and oil. Add the onion and garlic. Sauté about 4 minutes, until they begin to soften.
    Remove and reserve. Add the pieces to the pot. Cook about 5 minutes, until browned. Turn and cook in the same way. Drain and discard the grease that he released.
    Put the pot back on medium heat. Pour the sherry and broth and deglaze the pot. Add the reserved onions and garlic, the thyme, the figs, a cup of water, the duck and the seasoning cube.
    Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out, lower the flame to medium and cook for 45 minutes.
    Remove the Express® Pressure Cooker from the heat, let cool, remove the pressure regulator, open the Express® Pressure Cooker, and that's it!
    Remove thyme and fat from the surface. Season with salt and pepper.
    Bathe with the juice, cover with the figs and serve.

    TIPS

    To store the leftover duck, remove the meat from the bones and discard the skin. Discard and store in a sealed container in the refrigerator.
