Preparation
The chicken is washed, the skin is removed, salted and browned in olive oil.
Sherry, water, vinegar and salt are added to taste.
In a piece of cloth put peppers, garlic and cloves, tie with a string and crush with the hand of the molcajete and add to the chicken.
Chiles and raisins are added.
The potatoes are cooked separately and when they are cooked (half hard) they are removed and drained and added to the chicken.
