Espinazo de puerco in chile guajillo, delicious for all those lovers of guajillo chile. The combination is perfect and delicious.

Ingredients

6 servings
  • 6 pieces of pig
  • 1 guajillo chili pepper or swear
  • 1 tomato
  • 1 onion
  • 3 cloves of garlic
  • 1 pinch of Salt
  • 1 pinch of whole clove
  • 1 pinch of black pepper
  • 1 pinch of cumin
  • 1 piece of pineapple
  • 3 pinches of amaranth

    Preparation

    Put the meat to cook (in a clay pot of preference) with a glass and a half of water and plenty of salt (since it will not add more), until it dries, turning constantly, until golden brown on all sides .
    Put the guajillo chili to roast (it can be combined with mulato chili and wide, so that it is not very spicy), the tomato, the onion and the garlic in a comal.
    In a blender, grind the chili, onion, tomato, garlic, cloves, pepper, cumin, amaranth and pineapple.
    pour the ground ingredients into the saucepan with the spines, passing them through a colander, adding half a cup of water.
    Let boil until thick.

    TIPS

    Lower to a simmer when the meat is browned and pour the liquefied ingredients at that moment when the fat is still hot and never wait to let it cool.

    Lo hice y me quedo muy rico. Solo que agregue tres chiles mas y aparte 3 del costeño. El chile ancho no lo utilice. Riquisimo!!!!
