Espinazo Guajillo

Pork spine in guajillo chili, delicious for all those lovers of guajillo chili. The combination is perfect and delicious.

Ingredients

6 portions
  • 6 pork meat
  • 1 guajillo chili, or taunt
  • 1 tomtato
  • 1 onion
  • 3 cloves garlic
  • 1 pinch salt
  • 1 pinch whole clove
  • 1 pinch black pepper
  • 1 pinch cumin
  • 1 piece pineapple
  • 3 pinches amaranth

Preparation

Put the meat to cook (in an earthenware saucepan of preference) with a glass and a half of water and a lot of salt (since no more will be added), until it dries, turning constantly, until it is browned on all sides .
Put the guajillo chili to roast (it can be combined with mulato and ancho chili, so that it is not too spicy), the tomato, the onion and the garlic on a comal.
Grind the chili, onion, tomato, garlic, cloves, pepper, cumin, amaranth and pineapple in a blender.
Pour the ground ingredients into the saucepan with the spines, passing them through a strainer, adding half a cup of water.
Let it boil until it thickens.

TIPS

Lower to a simmer when the meat is browned and pour in the blended ingredients at that moment when the fat obtained is still hot and never wait to let it cool.

Lo hice y me quedo muy rico. Solo que agregue tres chiles mas y aparte 3 del costeño. El chile ancho no lo utilice. Riquisimo!!!!
