Preparation
The turkey is stuffed immediately before putting it in the oven. In a pan, melt 1 stick (100 grs.) Of butter, add a cup of finely chopped onion and 2 cups of chopped celery.
Let them fry slowly until the onion is tender. Remove the pan from the heat and add 2 teaspoons of salt, 1/2 teaspoon of black pepper and 2 teaspoons of seasoning to season the poultry (it can be substituted by 1 teaspoon of thyme, 1/2 teaspoon of sage and 1 bay leaf, all dry and crumbled).
Pour the mixture into a container in which 10 or 12 cups of toasted bread squares have been previously placed.
Stir well. Add 1/2 cup broth or white wine and 1/2 cup chopped parsley, stirring lightly with a fork. Enough for a turkey of 6 to 8 kg.
