La Feijoada is a typical dish from Brazil made with different pork meats and black beans. This dish was historically made to extract the greatest juice from the remains of pork but nowadays it is considered a gourmet delicacy.

Preparation
Feijoada starts a day in advance. The beans are placed in a deep refractory with cold water and left to soak in the refrigerator overnight.
In another deep bowl, dry meat is soaked and left to soak overnight.
The next day in a large pot heat the oil over medium heat. Add the cubed pork, onion, garlic and pepper. Cook for 5 minutes.
Add ham, chorizo, ribs, and dried meat to the pot. Add the beans and water to cover all the ingredients.
Allow the mixture to boil, reduce to low heat, cover and cook for 2 hours. Add more water during cooking if necessary.
Spoon approximately 1 cup of the beans with the spoon for the consistency of the dish. Season the saucer with salt and pepper.
Remove from heat and serve.
