Preparation
For the dough, in a bowl add the corn flour, wheat flour, oil, water and salt, the Rexal® baking powder and knead until a homogeneous consistency is obtained. Let stand 10 minutes and reserve.
In a deep pan heat the oil over medium heat. Meanwhile, with the help of a tortilla press, make a ball of dough and press to form an omelet, add a little tinga, close and fry for 5 minutes. Drain on absorbent paper and reserve.
For the guacamole, blend the avocado with onion, garlic, chile serrano, lemon juice and season with salt.
On a bed of lettuce, serve quesadillas with guacamole and enjoy.
