Ingredients

4 portions
  • 3 tablespoons butter, 45 g, habanero sauce
  • 1/2 cups onion, chopped into large cubes, habanero sauce
  • 2 tablespoons garlic, filleted, habanero sauce
  • 4 habanero peppers, in half, habanero sauce
  • 3/4 cups mango, cut into medium cubes, habanero sauce
  • 2 tablespoons apple vinegar, 30 ml, habanero sauce
  • 1/2 cups orange juice, 125 ml, habanero sauce
  • 1/4 cups D´Gari® syrup maple syrup flavor, 60 ml, habanero sauce
  • 2 tablespoons mustard, 30 g, habanero sauce
  • 5 allspice, semi ground, habanero sauce
  • to taste salt, habanero sauce
  • 3 tablespoons butter, 45 g, tamarind sauce
  • 1/2 cups onion, tamarind sauce
  • 2 tablespoons garlic, tamarind sauce
  • 1/4 cups chipotle peppers in adobo sauce, tamarind sauce
  • 1 cup tamarind concentrate, unsweetened, 250 ml, tamarind sauce
  • 1/4 cups D´Gari® syrup maple syrup flavor, 60 ml, tamarind sauce
  • 3 tablespoons worcestershire sauce, 45 ml, tamarind sauce
  • 3 allspice, tamarind sauce
  • to taste salt, tamarind sauce
  • 3 tablespoons butter, 45 g, BBQ sauce
  • 1/2 cups onion, BBQ sauce
  • 2 tablespoons garlic, BBQ sauce
  • 3 guajillo chilies, clean, hydrated, BBQ sauce
  • 1/2 cups ketchup, BBQ sauce
  • 3 tablespoons worcestershire sauce, 45 ml, BBQ sauce
  • 2 tablespoons apple vinegar, 30 ml, BBQ sauce
  • 1/4 cups D´Gari® syrup maple syrup flavor, 60 ml, BBQ sauce
  • 3 allspice, BBQ sauce
  • to taste salt, BBQ sauce
  • 1 kilo chicken wing, with fur, clean of feathers
  • 3 tablespoons salt
  • 1 tablespoon ground black pepper
  • 2 tablespoons paprika, paprika
  • 1/2 cups cornstarch
  • enough oil, to fry
  • enough dressing, ranch, to accompany
  • enough blue cheese, To accompany
  • enough potato wedges, To accompany
  • enough cucumber, and carrot, for the crudités, to accompany
  • enough cambray onion, pickles (including stems) with habanero, to accompany

Preparation

For the mango habanero sauce, heat a pan over medium heat, add the butter and cook the onion, garlic, habanero pepper and mango for 2 minutes. Add apple cider vinegar, orange juice and D'Gari® Maple syrup; cook for 5 more minutes, and take a semi-thick consistency; then add the mustard, allspice and salt, mix perfectly, remove from heat and blend, reserve.
For the tamarind sauce, heat a pan over medium heat, add the butter and cook the onion, garlic and chipotle chili for 2 minutes. Add tamarind concentrate, D'Gari® Maple Syrup, Worcestershire sauce, allspice, and salt; cook for 5 more minutes, until it takes a semi-thick consistency; then remove from the heat and blend, reserve.
For the BBQ sauce, heat a pan over medium heat, add the butter and cook the onion, garlic, and guajillo chili for 2 minutes. Add ketchup, D'Gari® Maple Syrup, Worcestershire sauce, apple cider vinegar, allspice and salt; cook for 5 more minutes until medium-thick; then remove from the heat and blend, reserve.
In a bowl season the wings with salt, black pepper and paprika, add the cornstarch and mix perfectly.
Heat in a deep pot at medium temperature with plenty of oil and fry the wings for approximately 8 minutes; divide into three and bathe with the 3 different sauces.
Serve the wings and accompany with ranch dressing with blue cheese topping, potato wedges, cucumber and carrot crudités, and the pickled chambray onion with habanero.

TIPS

You can divide the cooking of the wings in two: cook 4 minutes, remove the wings, wait for the oil to rise again in temperature and cook 4 more minutes, this will make them cook more evenly and they will be more crisp on the outside.
