With this delicious recipe for gorditas de suadero, you will learn the step by step to cook suadero like an expert taquero. These tasty fried gorditas are filled with homemade suadero and are served with cilantro, onion, red sauce and lemons. Remember that the brisket is the meat and the fat of the beef that is between the ribs and the skin of the cow, specifically, the meat of the breast and thighs. These gorditas are so good!

Ingredients

8 portions
  • 500 grams beef tenderloin
  • 2 cups Water
  • 1 cup evaporated milk
  • 1 orange, in halves
  • 1 teaspoon allspice
  • 1/2 cups coriander
  • 1 teaspoon clove
  • 1 cup onion, In rooms
  • 5 garlic
  • 2 leaves bay (laurel)
  • 2 tablespoons sea salt
  • 2 tablespoons vegetal oil
  • 500 grams corn masa
  • 1 tablespoon lard
  • 1 teaspoon salt
  • enough Water
  • 1 tablespoon lard, to fry the brisket
  • enough onion, finely chopped
  • enough coriander, finely chopped
  • to taste red sauce
  • to taste lemon

Preparation

For the brisket, place the broth with the water, evaporated milk, orange, allspice, coriander, cloves, onion, garlic, bay leaf and grain salt in a small pot. Cover and cook for 2 hours. If necessary, add more water to the softener so that it is always hydrated and does not dry out.
When it is soft, remove from cooking, let it cool a little and when possible, chop the meat finely.
Heat the oil in a skillet over medium heat and fry the tenderloin for 10 minutes, or until it is golden brown.
In a bowl mix the corn dough with the lard, salt and water, until you have a smooth dough.
With the help of your hands, form balls and flatten little by little until you get the shape of a chubby.
Heat a tablespoon of lard in a pan and cook the gorditas on both sides, about 5 minutes on each side.
With a serrated knife, open the gorditas on the edge horizontally and without completely separating. Fill with the brisket, onion and cilantro. Accompany with red sauce and lemons.

TIPS

You can also make the grilled gorditas on a comal, they will be delicious.
