The moussaka is a traditional Greek dish consisting of layers of eggplant, lamb, tomato and white sauce. This moussaka recipe is very rich and it is a dish that can be prepared a couple of days before a dinner or meal.

Ingredients

8 portions
  • 3 eggplants
  • 1 onion, chopped
  • 2 cloves garlic
  • 1/2 lemons, cut into slices
  • 1 bunch fresh parsley, chopped
  • 1 bunch fresh oregano, chopped
  • 1 kilo ground lamb, or ground beef
  • 3 tablespoons tomato puree
  • 450 grams tomtato, 450 grams
  • 250 grams feta cheese
  • 1 cup parmesan cheese
  • 1 cup ground bread
  • olive oils

Preparation

To prepare the aubergines: Cut the stems, remove the skin with a vegetable peeler, and cut lengthwise into thick slices. Cover the aubergine pieces with salt and pepper on both sides. Spray a large pan with oil and heat over medium heat. Fry the aubergine in a single layer, turning once, until golden brown on both sides, you will have to do it in the batches, adding more oil as needed. Drain the eggplant on a paper towel.
Add a little more oil to the pan and brown the onion, garlic, lemon, oregano and parsley. Cook and stir until smooth and fragrant, about 3 minutes. Add the minced lamb meat, stirring to dissolve the meat, and season with salt and pepper.
Add tomato paste and tomatoes. Cook over low heat until the liquid has evaporated, stirring occasionally. Get out of the fire.
Preheat the oven to 180 degrees centigrade.
Cover the bottom of a medium glass baking dish with 1/3 of the eggplant slices, completely covering the bottom. Spread half of the meat sauce over the eggplant with a spatula. Sprinkle with half the feta and parmesan cheese. Repeat the layers and finish with a final layer of eggplant. Cover the top with an even layer of breadcrumbs.
Bake the moussaka for 30 to 40 minutes or until golden brown. Let cool for 10 minutes before serving.
