Ingredients

6 portions
  • 200 grams pumpkin seed
  • 8 green tomatoes
  • 1 bunch fresh coriander, cool
  • 8 leaves parsley, cool
  • 4 leaves lettuce
  • 10 leaves radish
  • 1/2 onions
  • 4 cloves garlic
  • 1 cup chicken broth
  • 10 leaves basil
  • 4 serrano chiles
  • salt
  • 4 chickens, large boiled and shredded
  • vegetable oil

Preparation

Brown the seeds in a little oil. Remove and grind in the blender.
In a frying pan, heat 3 tablespoons of oil and add the seed, the chopped onion and the minced garlic.
Once it is well browned, add the green tomato, coriander, parsley, lettuce, radish leaves, basil and the chopped serrano pepper. Cook and season with salt.
Grind all the sauce in the blender and add the broth little by little until you get the stew to taste.
Return to the pan and add the chicken. Cook for 10 minutes and serve.

PRESENTATION

Accompany the pipian with handmade flour tortillas.

TIPS

You can add more or less chili depending on taste.
