Ingredients

6 portions
  • 200 grams pumpkin seed
  • 8 green tomatoes
  • 1 bunch fresh coriander, cool
  • 8 leaves parsley, cool
  • 4 leaves lettuce
  • 10 leaves radish
  • 1/2 onions
  • 4 cloves garlic
  • 1 cup chicken soup
  • 10 leaves basil
  • 4 serrano peppers
  • to taste salt
  • 4 chickens, large boiled and unraved
  • enough vegetal oil

Preparation

Brown the seeds in a little oil. Remove and grind in the blender.
Heat 3 tablespoon oil in a pan and add the nugget, chopped onion and chopped garlic .
Once it is well browned add the green tomato, cilantro, parsley, lettuce, radish leaves, basil and chopped serrano pepper. Cook and season with salt.
Grind all the sauce in the blender and add little by little the broth until you get the stew to taste.
Return to the pan and add the chicken. Cook for 10 minutes and serve.

PRESENTATION

Accompany the pipian of flour tortillas made by hand.

TIPS

You can add more or less chili depending on the taste.
