Ingredients

4 servings
  • 4 Guinea hen 500 grams
  • 3 spoonfuls of olive oil
  • black pepper
  • 4 zucchini slices diagonally
  • 1 onion in slices
  • 2 cloves of garlic chopped
  • 3 spoonfuls of balsamic vinegar
  • 2 teaspoons of Herbes de Provence

    Preparation

    Preheat the oven to 220 centigrade.
    Rinse the chicken under a stream of cold water, discarding the viscera and drying them with a paper towel.
    Varnish the hens with olive oil and sprinkle in and out with salt and pepper.
    In a bowl, mix the sliced ​​pumpkins, onion, garlic, 3 tablespoons of oil, balsamic vinegar and Provence herbs.
    Place the hens with the breast facing up, on an oven tray greased with oil.
    Place the vegetable mixture around the chickens.
    Bake for 35-40 minutes, until the juices run clear.
    Insert a thermometer in the thickest part of the thigh and make sure it registers 77 degrees (so that they are cooked).
    Pass the chickens to a cutting board and cover with aluminum foil. Let stand 5 minutes.
    Arrange in individual plates with the vegetables around and decorate with black olives.
