Preheat the oven to 250 C. Stir the orange juice, red wine, honey, soy sauce, cinnamon and nutmeg. Take 2 cups of the mixture and put them in a baking dish.
Wash the hens very well and dry with paper towels. Guitar the excess fat, put salt and pepper and put an onion divided in four, a clove of garlic and a piece of celery, each of the hens. Remove the onion, garlic, and celery from the hens, cut them in half, remove the bones from the breast and serve over the sauce with the watercress.
