Ingredients

6 portions
  • 1 kilo pork shoulder
  • 1/2 sticks annatto
  • 5 grains black pepper
  • 1/2 teaspoons cumin
  • 4 cloves garlic
  • 1 teaspoon oregano
  • 3 tablespoons apple vinegar
  • 3 cups Water
  • 1 Cube chicken consommé
  • 1/2 oranges, squeezed
  • 3 leaves banana

Preparation

Cut the pork into pieces - not very large, and put in the express pressure pot, covered with the banana leaf.
Blend the remaining ingredients and pour over the meat on the pot and cover with more banana leaves.
Bring the pot to the fire and when the steam comes out or wobbles, lower the heat and cook for 40 min or 1 hour approximately.
Let cool and uncover, shred the meat and mix with the juice that was released.

PRESENTATION

Serve with corn tortillas, marinated purple onion and habanero pepper sauce.

Yo tengo mi propia forma de cocinar la cochinita viene de familia y es enterrada y en la estufa en olla de peltre o aluminio
