Ingredients

6 portions
  • 1 kilo ground beef, pork
  • 2 pieces pasilla chile, hydrated and deveined
  • 6 guajillo chiles, hydrated and deveined
  • 10 garlic
  • 1/4 cups black pepper
  • 2 cloves
  • 1/2 cups árbol chile
  • 2 tablespoons oregano
  • 1 tablespoon cumin
  • 1/4 cups vinegar
  • 1/4 cups salt

Preparation

Blend the pasilla chili, guajillo chili, garlic, pepper, cloves, arbol chili, oregano, cumin and vinegar.
In a bowl, mix the sauce, ground meat and salt. Mix until all the ingredients are completely integrated.
Place the tip of a pet bottle in the tripe and fill it with the pork mixture; Take care of the pressure when adding the meat so as not to break the gut.
To serve, fry the longaniza in a pan with oil. Serve to taste.

TIPS

The longaniza can be made with minced meat and it can be with the amount of chili to your liking. You can leave the longaniza to dry in the refrigerator for days, to ripen it.
