  • 1 1/2 cups fine wheat
  • 1 kilo ground beef
  • 2 onions, finely chopped
  • 3 teaspoons cumin
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/3 cups pinon nuts
  • 1 teaspoon salt
  • 1 teaspoon baharat
  • 1 teaspoon cinnamon
  • oils, to fry
  • parsley, chopped to decorate


Put the wheat in a deep bowl with water soaking for 15 minutes, remove the water and pat dry with a paper towel.
In another container mix 750 grams of ground beef, 1 onion, cumin, salt and pepper, add the wheat.
Process the mixture in a food processor until you get a very fine dough.
To make the filling, heat 2 tablespoons of oil in a pan and add 250 grams of ground beef, 1 onion, Arabian pepper, cinnamon, and pine nuts.
Let the filling cool so you can make the Kibbehs manually.
Take a ball of wheat dough and make a hole with your thumb to put the filling.
Put a tablespoon of filling and close the dough so that it is like the Kibbeh in the photograph.
Make all the kibbehs like this and put them on a plate ready to be fried.
In a frying pan, heat the frying oil over medium heat and fry all the kibehs little by little until they are golden brown.
Pat them dry with paper towels to remove grease.


Serve the kibehs with tajine sauce, jocoque or hummus.


Arab pepper as well as fine wheat can be found in an Arab product store.
