Preparation
Preheat the oven to 250C.
Cut the Cosillar to obtain two equal parts (2 pieces each with 6 ribs). Remove excess fat, always leaving a thin layer of fat around the outside, which will help keep the meat moist.
Sprinkle the salt covering the fat of the chops.
In a hot pan, add the olive oil and brown the garlic and shallots.
Seal chops from all sides, approximately 1 minute per side. Remove the chops from the pan. (let the salt stay in the pan)
Add the paprika, sumac, mint, pepper and any species that chops likes. You can also put a bed of herbs under the chops and infuse the chops during cooking.
Place the chops stationary and interspersed (see photo), in a baking dish. Add half of the oil left over from the skillet on the ribs in the bowl (Do not let the garlic and shallots turn too brown).
Bake for 30 minutes.
Remove from oven, cut chops individually and serve.
