Ingredients

  • 1/4 cups olive oil
  • 2 tablespoons parsley, finely chopped
  • 1 tablespoon rosemary, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons shallot, finely chopped
  • enough salt
  • enough black pepper
  • 1 rack of lamb, 8 chops, approximately
  • 1 cup balsamic vinegar, for the reduction
  • 5 tablespoons Sugar substitute, for the reduction
  • 1 teaspoon garlic, finely chopped, for the reduction
  • 3 twigs rosemary, for the reduction, plus some twigs to decorate
  • enough mashed potatoes, for serving

Preparation

Preheat the oven to 200 ° C (392F)
In a bowl, mix the olive oil with the parsley, rosemary, garlic and shallots, season with salt and pepper. Reserve.
Spread the rack of lamb with the previous mixture and marinate for 40 minutes.
Sear the rack of lamb in a hot pan on high heat on both sides. Once seared, place it on a baking tray and bake 10 minutes or until the desired term. Rest a few minutes before cutting.
For the reduction, heat the balsamic vinegar with the sugar substitute, add the garlic and rosemary, cook until it reduces and has a thick consistency. Let cool and reserve.
Cut the rack into chops, serve a bed of mashed potatoes and place the chops on top. Bathe with balsamic reduction, decorate with fresh rosemary and enjoy.
