Preparation
Preheat the oven to 150 centigrade. Put the bread in a tray and put it in the oven to dry it. Watch so that it does not brown.
Stir in the garlic, bread, echalot and parsley. Melt the butter and add the mustard powder and cayenne pepper.
Season the ribs with salt and pepper. Spread with the butter and put the parsley mixture on both sides of the ribs.
Seal the ribs in a pan (3 minutes on each side) and then put in the oven on a tray for 20 minutes until they are sewn on medium.
Once they are ready, remove from the oven and cover with aluminum foil. Let it rest for 10 minutes to avoid the juices coming out.
Cut the ribs and serve with potatoes and mint jelly.
