Ingredients

4 portions
  • 1 cup Yoghurt Greek Style FAGE® Total 0%
  • 1 lemon, (grated)
  • 2 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 1/4 tablespoons salt, and black pepper
  • 1 teaspoon ground cumin
  • 4 legs of lamb
  • 1 onion, in thin slices
  • 5 1/2 cups dry white wine
  • 1 Cube chicken consommé
  • 2 cups tomato, chopped
  • 1 tablespoon mashed tomatoes
  • 1 teaspoon sugar
  • 2 leaves bay (laurel)
  • 2 tablespoons fresh oregano
  • 3/8 cups kalamata olive
  • 3/4 cups artichoke, in halves
  • 2 cloves garlic
  • paprikas, to sprinkle

Preparation

In a bowl add 3 tablespoons Yogurt Greek Style FAGE® Total 0% and stir with the lemon zest, garlic, 1 tablespoon of olive oil, season and add the cumin.
Mix the leg of lamb with the Greek Style Yoghurt FAGE® Total 0% prepared and stir well. Leave to marinate for at least 1 hour.
Heat 1 tablespoon of olive oil in a pan and fry the meat until golden brown.
Lift from the pan, add the oil and fry the onion until it is translucent.
Pour the wine and stir well, add all the remaining ingredients except the olives and the artichokes.
Cover the saucepan and simmer for 2 hours until the meat is tender, add the olives and artichokes and cook for 10 more minutes.
In a separate bowl add the garlic in the Greek Style Yoghurt FAGE® Total 0% remaining.
Serve the lamb with a spoonful of Greek Style Yoghurt FAGE® Total 0% with garlic and paprika.

PRESENTATION

The lamb is served with fresh tomatoes, wine and fresh oregano. Serve with salad and rice.
