Meat Ball Kebabs with Natural Greek Yoplait Sauce

Ingredients

20 portions
  • 3/4 kilos ground lamb
  • 3/4 kilos ground turkey
  • 1 cup onion, finely chopped
  • 10 tablespoons ground bread
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoons paprika
  • 3 cloves garlic
  • 2 eggs
  • 1/8 teaspoons saffron
  • 2 tablespoons olive oil
  • 1/4 tablespoons sumac
  • 1/2 cups Natural Greek Yoplait
  • 2 tablespoons fresh coriander, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoons chile piquín powder
  • 20 wooden sticks

Preparation

Pre-heat a grill.
In a deep bowl, mix the onion, ground bread, salt, pepper, paprika, garlic, eggs and lamb and turkey. Mix.
Divide mixture into 40 portions by making balls with each one.
Place 4 balls on each wooden stick.
In a pan over medium heat cook the saffron for 30 seconds or until it begins to release scent.
Remove from heat and crush.
Mix the saffron with olive oil in a small bowl.
Place the skewers on the previously greased grill and cook for 10 minutes, 5 on each side.
Remove and place in a dish.
Cover the cooked brochettes with the oil and saffron mixture and sprinkle with the sumac.
In a deep bowl mix the Natural Greek Yoplait, cilantro, lemon juice, honey and chili. Serve with skewers.

TIPS

Sumac can be found in Arab or Mediterranean stores.
