Meatball Skewers with Natural Greek Yoplait Sauce

Ingredients

20 portions
  • 3/4 kilos ground lamb
  • 3/4 kilos ground duck meat
  • 1 cup onion, finely chopped
  • 10 tablespoons bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoons paprika
  • 3 cloves garlic
  • 2 eggs
  • 1/8 teaspoons saffron
  • 2 tablespoons olive oil
  • 1/4 tablespoons sumac
  • 1/2 cups Yoplait® greek yogurt
  • 2 tablespoons fresh coriander, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoons hot chili powder

Preparation

Pre-heat a grill.
In a deep bowl, mix the onion, breadcrumbs, salt, pepper, paprika, garlic, eggs, and the lamb and turkey meat. Mix.
Divide mixture into 40 portions, making balls with each one.
Place 4 balls on each wooden stick.
In a skillet over medium heat cook the saffron for 30 seconds or until it begins to release aroma.
Remove from the heat and mash.
Mix the saffron with olive oil in a small bowl.
Place the skewers on the previously greased grill and cook for 10 minutes, 5 on each side.
Remove and place on a platter.
Cover the cooked skewers with the oil and saffron mixture and sprinkle with the sumac.
In a deep bowl, mix the Natural Greek Yoplait, coriander, lemon juice, honey and chili. Serve with the skewers.

TIPS

Sumac can be found in Arabic or Mediterranean stores.
