A rich recipe for chicken baked in lemon with onions and oregano. You can prepare a gravy with the juices that the chicken released when baked.

Ingredients

8 portions
  • 2 1/2 kilos whole chicken, to bake
  • 1/4 cups lemon juice
  • 2 red onions, thick slices
  • 2 teaspoons Dried oregano
  • 1 yellow lemon, slices
  • parsley, to decorate
  • margarines, to varnish

Preparation

Preheat the oven to 200º Celsius.
Rinse the chicken with cold water and dry it with paper towels.
In a tray greased with oil, place the chicken with the breast facing up.
Varnish chicken with margarine and lemon juice.
Sprinkle the chicken inside and outside with oregano, salt (generously) and pepper.
Arrange the onion slices around the chicken, and the lemon slices on the chicken.
Varnish the lemon and onion with olive oil.
Bake the chicken for 1 hour and a quarter. It should be removed until the juices run clear and the joints of the chicken move easily.
At half time of baking the onions are turned over.
Remove the chicken from the oven and let it rest covered with aluminum foil on a tray to cut, for 10 minutes.
Cut the chicken into pieces and serve decorated with chopped parsley and roasted onions.
If you want you can prepare a gravy (salsita): put the baking tray on the stove (or pass all juices and pieces of chicken that have been left in a pan) and add 1-2 tablespoons of flour. Mix quickly with a balloon whisk over medium heat. After cooking for 2 minutes add chicken broth (hot) little by little, like 2 cups. Boil, deglazing the tray and scratching everything that has been stuck. Let it reduce to medium heat about 5 minutes and season with salt and pepper. It is passed through a Chinese colander and served with chicken.

TIPS

For a better taste you can very generously salt the chicken from a night before and leave it covered in the refrigerator. This helps it have more flavor.
