Lemon Chicken with Cauliflower Rice

It is a dish that has a good supply of protein and is low in carbohydrates. We recommend you prepare it the night before and store it in a tupper, so it will be easier to take it to the office. It is very tasty!

Ingredients

  • 90 grams of boneless chicken breast
  • 2 pieces of yellow lemon
  • 1/4 of piece of onion
  • 4 spoonfuls of parsley
  • 1 teaspoonful of Salt
  • 1 teaspoonful of Pepper fat woman
  • 1 tablespoon of extra virgin olive oil
  • 1 Cup of Cauliflower Eva® Bits (for Cauliflower Eva® Rice)
  • 1 clove of Garlic finely chopped (for Eva's Cauliflower Bits Rice)
  • 2 spoonfuls of onion finely chopped (for Eva's Cauliflower Bits rice)
  • 1 teaspoonful of extra virgin olive oil

    Preparation

    Place the cauliflower on a kitchen napkin on a plate and microwave for 8 minutes at maximum power.
    In a hot pan add the tablespoon of olive oil, garlic and onion. Add the precooked cauliflower and cook for 5 minutes.
    For the chicken; sauté the onion and garlic in a hot pan with a little olive oil.
    Cut one of the sliced ​​lemons and add them to the pan, add the lemon juice of the leftover lemon and the pepper.
    Add the chicken breast and cook it evenly. Season with salt and pepper.
    Serve chicken breast along with Eva's Cauliflower Bits Rice.

    PRESENTATION

    Serve on a white plate.

    TIPS

    If you can not find yellow lemon (Spanish lemon or Eureka), you can substitute 1/2 orange or 2 sour lemons.
