Prepare this healthy choice of chicken tacos al pastor without carbohydrates served on a French Eva® lettuce, accompanied by roasted pineapple, cilantro and purple onions. With a little bit of the taco chile sauce and a few drops of lemon, this taco option is ideal for a healthier diet without limiting cravings.

Ingredients

6 portions
  • 50 grams achiote, for marinade
  • 1/4 cups apple vinegar, for marinade
  • 3 guajillo chilies, clean, deveined and seedless, hydrated for marinade
  • 2 ancho chili peppers, clean, deveined and seedless, hydrated for marinade
  • 3 cloves garlic, for marinade
  • 1/4 white onions, for marinade
  • 1/2 cups pineapple juice, for marinade
  • 1 tablespoon sea salt, for marinade
  • 1 tablespoon allspices, for marinade
  • 2 whole cloves, for marinade
  • 1 tablespoon oregano, for marinade
  • 1 roma tomato , roast, for marinade
  • 1 tablespoon cumin, for marinade
  • 1 chicken breast, without bone and without skin, cut into small cubes
  • 1 tablespoon olive oil, or linen
  • enough French Lettuce Eva®
  • 1/2 pineapples, cut in half moons
  • 1/2 cups fresh coriander, chopped
  • 1/2 cups red onion, finely chopped
  • to taste Arbol chili sauce, To accompany
  • to taste lemon, To accompany

Preparation

For the marinade, blend the achiote, vinegar, chilies, garlic, onion, juice, salt, pepper, cloves, oregano, tomato and cumin until a homogeneous mixture is obtained.
Place the chicken and marinade in a bowl with the shepherd marinade for 1 hour in refrigeration.
Heat a pan over medium heat with the oil and cook the chicken you marinated until it is cooked. Reserve capped.
Heat a grill over high heat, roast the pineapple until golden brown, remove and cut into cubes, reserve.
On a table place sheets of French Lettuce Eva®, add the chicken to the shepherd and serve with the roasted pineapple, cilantro, onion, served with a little sauce and lemons.

PRESENTATION

Serve the tacos with purple onion, roasted pineapples and fresh coriander, served with lemon and red sauce.

TIPS

Grill all the ingredients of the marinade to the comal so that your preparation is more aromatic and delicious.
