Cut the loin into slices and put it in a bowl. (If you want to do it with the whole loin we must seal it first in oil, that will help us to better cook). We put in the blender the apple juice and an apple without peel, the consommé, the pepper and the salt. With this we bathe the tenderloin and marinate for 2 hours in the refrigerator.
We arrange the loin in a refractory and bathe with the juice where it was marinated, add the fried chiles and other apples in slices without peel, cover it with aluminum foil and put it in the oven at 350ºF for an hour and a half.
