Loin Stuffed with Plum Raisin and Cheese Covered with Bacon

Ingredients

8 portions
  • 1 tablespoon Sodium bicarbonate, for Arm & Hammer ™ Cooking
  • 2 kilos pork tenderloin, an open piece in thin savanna
  • 1/4 cups oil, for the filling
  • 4 cloves garlic, finely chopped
  • 1 white onion, finely chopped
  • 2 cups seedless prune , for the filling
  • 2 apples, cut into cubes for filling
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 cups Brie cheese, cut into cubes
  • 190 grams cream cheese, at room temperature
  • 30 slices smoked bacon, to cover the spine
  • 8 Red apples, cut in quarters
  • 2 cups white wine
  • 1 bunch rosemary

Preparation

Preheat the oven to 180 ° C.
Place the pork loin on a tray, sprinkle 1 tablespoon of Arm & Hammer ™ Sodium Baking Soda and rub the meat for 1 minute.
Heat a large skillet over medium heat, add oil, garlic, onion, prune, apple, cook a few minutes. Season and reserve.
In a bowl add the brie cheese and cream cheese, mix well and reserve.
Stretch the open back, add the mixture of the prunes and the cheese mixture. Close the spine
Cover well with bacon slices, roll and tie with kitchen thread.
Place the loin on a deep baking tray, with apples, white wine and rosemary. Season on the outside and cover with aluminum. Bake for 1 hour or until cooked. Discover the loin so that the bacon takes color.
Remove from the oven and enjoy.

PRESENTATION

Serve the loin cut with a bit of baked apple, you can add mashed potatoes as garnish.

TIPS

The Arm & Hammer® sodium bicarbonate in the meat helps to soften and soften. You can sprinkle directly on the meat or make a brine to soak.
