Ingredients

14 servings
  • 1 pork tenderloin 3 kg, clean
  • 1/4 of Cup of almond to loin loin
  • 1/4 of Cup of prune without bone, to straighten the loin

  • 3 cups of tamarind concentrate for the sauce
  • 2 spoonfuls of fresh thyme for tamarind sauce
  • 3 spoonfuls of Apple vinager for tamarind sauce
  • 1 teaspoonful of allspices for tamarind sauce
  • 1/4 of Cup of chicken soup for tamarind sauce
  • 1/4 of teaspoonful of clove for tamarind sauce
  • 1 tablespoon of Butter

Preparation

Preheat the oven to 200 ° C On a board place the loin and with the help of a knife form some holes in the whole piece of meat, introduce in each hole almonds, plums, apricot and garlic, sprinkle Sazón Completa Sassón® on the spine for Spice up. Reservation.

For the tamarind sauce, blend all the ingredients until you get a smooth sauce.
Heat a pan over medium heat with the butter, add the sauce and cook 10 minutes until slightly reduced, remove from cooking and reserve.
On a board cut the loin, in slices of the thickness you want, served on a plate with mashed potatoes. Bathe with the tamarind sauce and decorate with fresh thyme.

PRESENTATION

Cut the loin into individual portions and bathe with tamarind sauce and fresh thyme, served with salad or mashed potatoes.

TIPS

Varnish the loin when it is in the oven with honey and paprika so that the bacon gets a spectacular cover.
