If you love cakes, you cannot miss this tasty leg cake marinated with chili peppers and achiote. Its marinade is easy to make and you can use it in different preparations. You can include accompaniments that you like such as onion, tomato or avocado, what else are you going to add?

  • 1/4 onions, for the marinade
  • 2 cloves garlic, for the marinade
  • 6 tomatoes, in quarters, for the marinade
  • 1/4 cups achiote, for the marinade
  • 6 guajillo chilies, clean, without veins or seeds, hydrated in water, for the marinade
  • 1/2 cups orange juice, for the marinade
  • 1/4 cups white vinegar, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1 teaspoon clove, for the marinade
  • to taste salt, for the marinade
  • to taste black pepper, for the marinade
  • 1 1/2 kilos pork leg, whole, one piece
  • to taste salt
  • to taste black pepper
  • 6 Mexican french bread rolls
  • 1/4 cups mayonnaise
  • 1/2 cups pinto beans, refried
  • enough french lettuce
  • 1/2 cups onion, sliced
  • 1 cup tomtato, sliced
  • enough avocado, in sheets
  • enough Chili pepper, in vinegar


On a hot griddle, roast the onion with the garlic and tomatoes until the skin begins to darken. Remove from the heat and blend together with the achiote, guajillo chiles, orange juice, white vinegar, oregano, cloves, salt and pepper until you get a homogeneous mixture. Reservation.
Preheat the oven to 200 ° C.
Place the pork leg on a deep tray, season with enough salt and pepper, and bathe with the marinade until completely covered. Cover with aluminum foil and bake for 40 minutes at 200 ° C.
Remove from the oven, let it cool slightly and cut the leg into thin slices.
To assemble the cake, with a serrated knife, open the bolillo bread in half, spread a lid with mayonnaise and another with beans. On the mayonnaise cover, place lettuce leaves, add the slices of marinated leg, add onion, tomato and avocado to taste, cover with half the bread with beans, accompany with pickled jalapeño peppers.


Accompany with pickled jalapeno peppers.


If you want the leg to brown a little, you can leave it in the oven for 10 more minutes, without the aluminum.
