  • 1 pork leg
  • 6 ancho chili peppers
  • 4 pasilla chili peppers
  • 3 cloves garlic
  • 1/2 onions, grilled
  • 6 whole cloves
  • 1 cup vinegar, Economax
  • 3 tablespoons honey, Hill Country Fare
  • to taste salt
  • to taste black pepper


Clean the pork leg and score it with a sharp knife, cutting grooves half a centimeter deep, forming rhombuses on the entire surface of the greasiest part of the pork.
Grill the peppers, clean them, remove the veins and soak the peppers in hot water.
Grill the garlic and onion wrapped in aluminum foil on a skillet.
Grind the peppers, garlic, onion, cloves, vinegar, honey, salt and pepper in the blender.
Spread the marinade over the leg and bake at 325 ° F (160 ° C), calculating 1 hour per kilo (approximately 2 pounds), add marinade frequently. After the oven time has passed, let rest before cutting.


You can accompany it with guava jam stirred together with a bit of the same adobo.
