  • 1 tablespoon vegetal oil, for the wings
  • enough vegetal oil, to fry
  • 1/4 cups sour cream, for the marinade
  • 1 cup butter, for the marinade
  • 1 cup spicy sauce, for wings, for marinade
  • enough coriander, to decorate

Preparation

For the esquites, in a saucepan with hot vegetable oil, fry the onion until it begins to turn bright, add the bacon and brown, stirring.
Add the yellow corn, the chile de arbol and the coriander; Season with salt and pepper. Cook for 15 minutes. If you notice that the corn begins to stick in the saucepan, add a little water, this will help the corn to be soft on the inside but crispy on the outside. Reservation.
In a large bowl place the wings, add the garlic powder, paprika, cumin, guajillo powder, enough salt, pepper and vegetable oil. Mix until the powders are integrated into the chicken pieces. Marinade for 20 minutes in refrigeration.
In a pan with hot vegetable oil, fry the wings over medium low heat. Drain on absorbent paper. Reservation.
For the marinade, in a bowl mix the sour cream, butter and hot sauce, incorporate with the help of a balloon whisk.
In a deep deep frying pan pour the marinated sauce, add the wings and dip over the marinade. Cook for 10 minutes over low heat.
Serve the wings, add the fried schites to taste and decorate with coriander. Accompany with guacamole.

TIPS

It is very easy to make guajillo chili powder, you only need to have 6 or 8 pieces of guajillo chili clean; without veins and seeds. Blend for a few minutes. You can use it in different preparations.
