Preparation
Cook the meat in the microwave, as indicated on the package.
Meanwhile, heat a 10-inch nonstick frying pan over medium-high heat.
Add the zucchini, onion and pepper; cook 4 minutes, stirring frequently.
Add the corn, tomato, pepper and cilantro.
Lower the heat to medium low; cook over low heat, uncovered, 3 minutes or until the vegetables are soft and the mixture is very hot.
Sliced cooked meat in thin strips; add it to the vegetable mixture.
Fill each corn tortilla with two-thirds cup of the meat and vegetable mixture.
