Preparation
In a bowl, mix the meat with onion, cilantro, egg, salt and bread crumbs. Form the meatballs.
In a pan over medium heat, heat the oil and seal the meatballs. Reservation.
For the caldillo, blend all the ingredients except salt.
Fry the caldillo in the same pan of the meatballs and cook over low heat and cover for 20 minutes or until the meatballs are cooked. Season with salt
