We start to cook a couple of eggs. Meanwhile we prepare the meat. In a bowl we toss the minced meat, add the ketchup and mix well. We already have the meat and omelette ready to cook. Now we only have to go assembling the cake. Meanwhile, we will preheat the oven to 180ºC.
Before placing anything in the mold we add a little oil, just enough so that with the help of a little kitchen paper we greased well the bottom and the walls of the mold. At first it would not be necessary because the bacon would release enough fat but just in case.Now we can go placing each ingredient by order.
We start by placing the bacon across the mold so that it occupies the bottom and is stuck to the walls. Now we add the minced meat trying to be more or less equally distributed. Let's go with the boiled eggs. We leave to the half and place them in the minced meat until we are at the same height with the cut out (looking at the yolk). On top of the cooked eggs place the slices of cheese and on top of the cheese the piquillo peppers open in the middle. We only have to throw the tortilla preparation to the edge of the mold.
Cover with aluminum foil (silver paper) so that we do not burn the tortilla layer and put it in the oven at 180ºC. We'll have it covered for 20 minutes. Then we remove the aluminum foil and leave it for another 20 minutes, watching the color of the tortilla layer is not going to brown too much. Once ready we take out the oven, we tap on the table or countertop so that release well and unmold. The appearance of roasted bacon is irresistible. Ideally, it should be eaten fresh from the oven, with care that the cheese burns a lot, but if not, you can heat it later in the microwave without problem. Only or accompanied by the sauce that you like the most. very rich.
