Ingredients

10 portions
  • 2 ancho chili peppers, deveined and hydrated
  • 2 guajillo chilies, deveined and hydrated
  • 1/2 sticks annatto paste
  • 1/4 cups white vinegar
  • 1/2 cups orange juice, sour
  • 4 tablespoons corn oil
  • 1 cup onion, finely chopped
  • 1 cup fresh coriander, chopped
  • 1 kilo pork steak, in steaks, seasoned
  • 1/2 onions, filleted
  • 6 lemons, cut into fourths
  • 2 cups spicy sauce, your choice
  • 1 cup pineapple, natural roasted and chopped

Preparation

Blend chiles, annatto (achiote), vinegar, orange juice and set aside.
Spread the achiote mixture on the meat and cover with the rest of the mixture. Marinate 2 hours.
In a very hot pan sauté the onion with a little oil. Add marinated meat and cook until well browned.
Chop the meat already cooked to assemble the tacos.
Accompany with onion, cilantro, lemon, pineapple and salsa.
