Preparation
Blend chiles, annatto (achiote), vinegar, orange juice and set aside.
Spread the achiote mixture on the meat and cover with the rest of the mixture. Marinate 2 hours.
In a very hot pan sauté the onion with a little oil. Add marinated meat and cook until well browned.
Chop the meat already cooked to assemble the tacos.
Accompany with onion, cilantro, lemon, pineapple and salsa.
