Preparation
Preheat the oven 190ºC.
In a pan over medium heat, add the olive oil and onion, add the tomato puree, cook for two minutes, add the cream, salt and let cool.
Place the serrano ham strips and place the fillet on top, cover the fillet with the serrano ham strips, until it is completely wrapped. Reservation.
Spread the puff pastry approximately 3 mm thick, add a little of the creamy tomato sauce, place the fillet on top.
On top of the steak add the pieces of goat cheese, cover the meat with the puff pastry, until it is completely covered. Varnish with egg.
Bake 40 minutes and let stand 10 minutes before serving. Serve with parsley.
